Super Simple! Inspired by Dr. Steven Gundry’s flourless cake recipe. I love to take something and make it just a little bit better! Added collagen for gut health and skin. I used Trader Joe’s Organic Coconut Cream instead of heavy cream.
This recipe makes a large single serving. Though it could be shared with someone you love. If you’re still kind of “new” relationship and you don’t want to eat too much in front of them. OR if you’re not so “new” and you really, really love the person, you can make them one too.
- 2 tablespoons pure organic cacao powder (Dagoba is awesome)
- 1 2/2 tablespoons Lankanto Monkfruit
- 1 Scoop of Vital Proteins Collagen Peptides
- 1⁄4 teaspoon aluminum-free baking powder
- 1 large pastured egg
- 1 tablespoon Trader Joe’s Organic Coconut cream
- 1⁄2 teaspoon pure vanilla extract
- 1 teaspoon of Ghee or Coconut Oil and a little more greasing the bowl.
INSTRUCTIONS:

- Mix the dry ingredients in a small mixing bowl.
- In a separate small bowl, whisk the egg, coconut cream, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix. Use a spatula to push down the ingredients on the side.
- Butter a small bottom bowl or ramekin
- Pour in the batter.
- Microwave on high for 1 minute 20 seconds and remove.
- Flip the cake onto a small plate.
- Serve with So-Delicious Vanilla Bean Coconut Milk Ice Cream
