It can be a tough transition for those who love pasta and bread to adopt an anti-inflammatory, paleo, ketogenic, or bulletproof diet. But adapting recipes to meet your specific needs can produce delicious meals that are good for your gut, skin, brain, and waist!
Special Note: This lasagna recipe can also be modified to use zucchini noodles instead of Capello’s noodles for those wanting fewer carbs. For those of you not avoiding dairy, you can use dairy-based cheese, though goat cheese is recommended over cow dairy.
If you’re not in the mood for lasagna but are craving spaghetti, the sauce, with or without meat, is great served over your choice of noodles. Miracle noodles or Wonder noodles (shirataki noodles) or zucchini noodles (vegetable noodles) are all excellent options. Shirataki noodles are especially good as they are zero calories, gluten and grain free. It almost sounds too good to be true, but that is why they are called “Miracle” and “Wonder” noodles. I’m surprised they aren’t called “Too Good to Be True” noodles.
This Paleo, Grain Free, Gluten Free lasagna is a perfect Sunday night meal served with a tossed green salad of mixed greens.

- 1 Tbs coconut oil
- 1 1/2 cup onion (chopped)
- 4 cloves garlic (crushed or minced)
- 3 Tbs fresh basil (chopped)
- 1/2 cup dry red wine
- 2 Tbs balsamic vinegar
- 1/2 Tbs Swerve sweetener or Lakanto Monkfruit
- 1 14.5 oz canned organic fire roasted tomatoes
- 1 14.5 oz canned organic diced tomatoes
- 1 14.5 oz canned organic tomato sauce
- 1 6 oz canned organic tomato paste
- 2 tsp Italian Seasoning
- 2 tsp black pepper
- 1-3 tsp sea salt to taste
- 1.5 lbs grass fed ground beef www.butcherbox.com
- 16 oz organic broccoli florets www.traderjoes.com
- 1 box Cappello's Fettuccine or Lasagna Noodles www.wholefoods.com in the frozen section
- 1 package Kite Hill Almond Milk Ricotta http://www.kite-hill.com/where-to-buy/
- 1 Tbs Italian Seasoning
- 1/2 cup Follow Your Heart Dairy Free Shredded Parmesan http://followyourheart.com/products/parmesan/
- 1/2 cup Daiya Dairy Free Mozzarella Shreds https://daiyafoods.com/our-foods/shreds/mozzarella/
- Heat oil in a pot or large skillet over medium-high heat.Saute onions and garlic for 5 minutes. Stir in remaining sauce ingredients, and bring to a boil. While this is heating up, brown ground beef in a separate pan. Add the ground beef to the sauce. Mix thoroughly. Reduce heat to medium. Cook uncovered for 15-30 minutes. Add salt and pepper to taste.
- In a bowl, combine ricotta and Italian seasoning. Set aside. Steam broccoli. (Approximately 5 minutes). Set aside.
- Have all of the ingredients out and ready for assembly in a large rectangle pan or casserole dish
- Right before assembling the lasagna, follow the package instructions for the Cappello's noodles/lasagna sheets. They cook VERY quickly and will turn sticky and mushy if not used immediately. It takes less than 90 seconds so be ready.
- Spread a thin layer of the meat sauce in the bottom of a 13x9 inch pan. Layer with lasagna noodles, ricotta cheese mixture, mozzarella cheese, broccoli, and meat sauce. Continue layering until all ingredients are used, reserving some mozzarella and parmesan. Cover pan with aluminum foil.
- Bake in preheated oven for 20 minutes. Uncover, and top with remaining half cheese. Bake for an additional 15 minutes. Remove from oven, and let stand 10 to 15 minutes before serving. ENJOY your guilt-free Paleo lasagna
The pasta sauce is also excellent served with zucchini noodles, Miracle noodles and Thrive Market Wonder noodles. Shirataki noodles are an amazing choice.
